Quick & Easy Steak Poke Bowl Salad

Prep Time: 15min. Serves: 2

You Will Need:

  • Pan Fried or Grilled Steak cut into strips- see recipe here , you can also substitute with Grilled Chicken or Fish.
  • 1 Cup Baby Spinach – you can use Rocket or Mixed green leaves
  • 4 Cherry Tomatoes – Halved
  • Julienne Beets – a handful
  • Julienne Carrots- a handful
  • Red Bell Pepper – About 6-8 thin strips
  • Yellow Bell Pepper – About 6-8 thin strips
  • 1/8 Cup Red Onions strips
  • 6 Thick Cucumber slices, halved and core removed
  • 1/2 Cup steamed Cauliflower rice ( you can substitute with brown rice or wild rice)
  • Sesame seeds for garnishing (Optional)

 

 

Method:

  • In a wide bowl, arrange the Baby Spinach at the bottom.
  • Layer all the other vegetables in sections around the bowl.
  • In the middle of the bowl, carefully arrange your steak strips, I like mine Medium Rare😜.

Dress with a vinaigrette

Vinaigrette Recipe:

In a jar, mix olive oil, red wine vinegar, 1 tsp mustard, 2 cloves crushed garlic, 1 tsp dried chilies, 1 tsp honey, salt and pepper to taste. Shake all the ingredients together and serve over your salad.
