YOU WILL NEED:
- About 12-16 Chicken pieces(preferably drumsticks & thighs)
- 1 Can KOO Chickpeas rinsed and drained
- 4 Large Potatoes , cut into quartersÂ
- 1 Cup Dried Apricot Halves
- 1 Can Chopped Tomatoes
- 1 Large Onion
- 6 cloves of Garlic -finely chopped
- 1 Tbsp grated Ginger
- 1 Tbsp ground Cinnamon
- 1 Tbsp ground Cumin
- 1 Tbsp ground Coriander
- 1 Tbsp Paprika
- 1 Tbsp KOO Tomato Paste
- 500ml Chicken Stock
- 3 Tbsp Olive Oil
- Salt & Pepper to taste
